Texmex beef tacos with cheese, radish & tomato

  • Beef mince
  • 1 cheddar cheese portion
  • 1 taco seasoning sachet
  • 1x 6 flour tortillas
  • 1 baby cos lettuce
  • 2 tomatoes
  • 1 radish bunch
  • 1 brown onion
  • 1 garlic clove
  • 1 coriander bunch

Chef's note: Tex-Mex is a cuisine created by the Texans with Mexican decent. It is characterised by its use of lots of cheese, meat, beans and flour tortillas.

Method:

1. Prepare the ingredients

Wash the vegetables. Roughly chop the tomato. Finely chop the onion and garlic. Thinly slice the radish and lettuce. Finely chop the coriander stems. Roughly chop the coriander leaves. Grate the cheese.

2. Cook the beef

Heat a splash of oil in a frying pan over medium -high heat. Add the beef mince, using a spoon to break it up into smaller pieces, and cook for 5 minutes or until mostly browned. 

3. Add the ingredients 

Add the taco seasoning, coriander stems, onion, garlic and half the tomato. Reduce the heat to medium-low.

4. Cook the beef mixture

Cook, stirring, for 8 minutes or until the tomatoes have broken down and liquid has evaporated. Place the beef mixture into a serving bowl. 

5. Heat the tortillas

Heat a small splash of oil in a frying pan. Lightly fry the tortillas to crisp slightly. Keep warm by wrapping the tortillas in a tea towel or in a low oven. Alternatively, heat and soften the tortillas directly over a gas flame or a low oven.

6. To serve

Serve the tortillas with the beef mixture, radish, remaining coriander, remaining tomato, lettuce and grated cheese. Allow everyone to build their own tacos.
