Teriyaki chicken, broccoli, udon noodles

INGREDIENTS‭:‬

Chicken maryland fillet

Teriyaki sauce (salt in soy sauce so please taste as you add)

Togarashi

Udon noodles

Broccoli

Spring onion

DIETARY INFORMATION‭:‬

Teriyaki sauce: Ingredients: Light soy, mirin, sugar, cooking wine. Contains: Soy

  

METHOD:

1. Prepare the ingredients: Wash the vegetables. Separate the broccoli florets into bite sized pieces. Slice the spring onions into thin rounds. Dice the chicken.

2. Cook the teriyaki chicken: Heat a splash of oil in a frying pan over medium heat. Add the chicken and cook for 5 minutes or until the chicken is browned slightly and cooked through. Add the teriyaki sauce and stir until combined. Do not reduce too much.

3. Cook the noodles and broccoli: Meanwhile, bring a saucepan of water to the boil. Add the noodles and the broccoli. Boil for 2 minutes or until the noodles are tender and the broccoli is cooked to your liking.

4. To serve: Divide the noodles between the serving bowls. Top with the teriyaki chicken and the broccoli. Sprinkle the togarashi and the spring onions over the chicken.
