Garlic prawn linguine

Baby spinach leaves

1. Prepare the ingredients: Wash the vegetables. Dice the red capsicums into small pieces. Thinly slice the chillies. Cut the lemon into wedges. Thinly slice the parsley.
2. Make the garlic prawns: Heat a small splash of oil in a frying pan over high heat. Add the prawns and the capsicums. Cook for 2 minutes or until the prawns are just cooked through. Add the butter, chilli and the garlic and stir for 10 seconds. Remove from the heat and stir through the spinach leaves and a pinch of salt.
3. Cook the pasta: Bring a large saucepan of salted water to a boil. Add the pasta and cook for 2 minutes or until cooked to your liking. Strain the pasta through a sieve or colander. Add the pasta to the garlic prawns and toss well to combine.
4. To serve: Divide the pasta between the serving plates. Sprinkle the parsley over the pasta and serve with the lemon wedges.
