Chicken `Shish Taouk`

MASTERCLASS INGREDIENT BOX RECIPE | COOK: 15MINS
INGREDIENTS:
1. Marinated chicken
2. Mint tahini
3. Cos lettuce
4. Radish
5. Cucumber
6. Tomato
7. Lemon
8. Parsley
METHOD:

Preheat a splash of your preferred oil in a pan over a medium heat.

Place the chicken in the pan. Cook it for about three minutes each side, ensuring it browns nicely.

Cut the cos lettuce in half and remove the stem.

Dice the tomato and roughly chop the cucumber and radish.

To make the fattoush salad, combine all the chopped vegetables and dress with olive oil, lemon juice and a pinch of salt.

Turn the heat off for the chicken and leave it in the pan for 3 minutes. This allows it to cook through gently.

Add a splash of water to the pan and turn the heat back up to medium. Using a spoon, baste the chicken and cook until the marinade thickens. Garnish with some salt and a squeeze of lemon juice.

To plate up, make a bed of lettuce leaves, then add the fattoush salad onto and sliced chicken on top. Garnish with some chopped parsley and mint tahini.
DIETARIES:
Vegetarian: Smoked onion and celeriac is provided. Remove from bag and reheat in a pan over a medium/low heat.
